Paul Chavy Volnay Taillepieds Premier Cru 2023

Paul Chavy Volnay Taillepieds is a premier cru from one of the steepest and stoniest sites in the commune.

Volnay makes only red wine and is the most perfumed and finely framed of the Côte de Beaune communes, its reds built on elegance and silky tannin rather than power. Taillepieds sits high on the slope above the village, on very thin soil over fractured limestone, with a steep gradient and sharp drainage; the name is generally taken to refer to the stones underfoot. It is among the most structured of the Volnay premier crus, more mineral and tightly wound than Caillerets or Champans, and it usually needs several years to unwind. Pinot Noir from here is destemmed or given a portion of whole bunches, fermented with gentle extraction and aged in barrel with a restrained proportion of new oak.

Fine boned but firm, it suits duck, game birds and roast veal; serve at around 16 degrees.
