Paul Gadenne Chignin La Débaroule Jacquère draws together three small plots of organically farmed forty-year-old vines in one commune.

Chignin sits on the south-facing side of the Combe de Savoie, its vineyards spread across scree and clay-limestone below the Bauges massif. Jacquère is the workhorse white of the region and, in the right hands, gives a taut, low-alcohol wine with real chalky definition. La Débaroule brings together Gadenne's three organically farmed plots in the commune, all close to one another and sharing much the same elevation at 400 metres, south-west aspect and clay-and-limestone soils, with vines around forty years old. The fruit is handpicked and pressed gently to tank, where it ferments and then matures for eight months before bottling. Nothing sees oak, and the wine is left to show the site plainly.

Drink young and well chilled with shellfish, fondue or grilled trout. Serve at 10-12°C.
