Paul Gadenne Chignin Mondeuse 2020

Paul Gadenne Chignin Mondeuse is a certified organic Savoie red made from whole bunches with a measure of carbonic influence.

Mondeuse is Savoie's indigenous red variety, dark-fruited and naturally peppery, with firm acidity and a fine grain of tannin that sets it apart from the Gamay grown alongside it. Gadenne sources this wine from a certified organic site in the Chignin area, on calcareous clay soils on the south-facing slopes of the Combe de Savoie. The fruit is picked by hand and worked as whole bunches with some carbonic influence, which softens the variety's natural grip and lifts its aromatics. After fermentation the wine rested six months in stainless steel, with no oak, before bottling. This is the straightforward, transparent style of Savoie winemaking that has brought the region renewed attention outside France.

Drinking well now and for several years, it suits cured meats, roast pork or a tartiflette. Serve at 15-17°C.
