Description

Paul Gadenne Chignin Mondeuse is made from 60-year-old vines of Savoie's principal red variety, grown at 450 metres on clay and limestone.

Mondeuse is the historic red grape of Savoie, an alpine variety with dark fruit, peppery spice and firm, fine-grained tannin that has more in common with Syrah, to which it is distantly related, than with anything grown further west. Paul Gadenne farms two plots of it: a parcel of young vines at Chignin and this older holding some 20 kilometres away at Saint-Jean-de-la-Porte, one of the better-regarded sites for the variety. The vines there are around 60 years old, face south and sit at 450 metres on clay-limestone soils. Fermentation is with whole bunches over 15 to 20 days, with gentle pump-overs, and the wine is then matured on fine lees in tank for eight months, so nothing comes between the grape and the site.

Drink over the next five years, lightly chilled if you like, with charcuterie, diots sausage or a tomme de Savoie. Serve at 15-16°C.
