Philip Togni Vineyard Cabernet Sauvignon 2022

Philip Togni Vineyard Cabernet Sauvignon is a co-fermented Cabernet blend from high on Spring Mountain.

Remote even by Napa standards, the Spring Mountain District sits on the eastern slope of the Mayacamas, the coolest and wettest part of the valley thanks to the Pacific 50 kilometres away and San Pablo Bay 40. The ten-hectare plot here is east-facing, organic and dry-farmed, above the fog line just over 600 metres up, on steep terraces of weathered sandstone and shale with vines averaging more than thirty years. Plantings run 82 per cent Cabernet Sauvignon and 15 Merlot, with Cabernet Franc and Petit Verdot filling out the rest, mirroring Château Margaux. Everything is co-fermented after a three-day cold soak, then given twenty months in French oak at 40 per cent new.

Structured and serious, with dark berry fruit, bay leaf, graphite and a savoury mountain-grown austerity. The tannins are firm and fine. Decant and serve at 18 degrees. Roast beef, slow-cooked lamb or a mature cheddar will meet it; so will ten years of patience.
