Philip Togni Vineyard Tanbark Hill Cabernet Sauvignon is the second wine of the Spring Mountain estate.

Tanbark Hill draws mainly on a three-acre block of the same vineyard, planted almost entirely to Cabernet Sauvignon, where the soils run a little richer than elsewhere on the property. To that are added barrels from the Spring Mountain bottling judged better suited to earlier drinking. Cellar work is identical to the estate wine, so the difference lies in fruit source and selection, not in care. Twenty months in oak at 40 per cent new follow. Where the family's flagship is famously coiled and slow to open, this is the more succulent, forward expression of the same hillside.

Mineral-edged and already approachable, with cassis, dark plum, cedar and a fine dusting of tannin. Decant briefly and serve at 18 degrees. Steak, roast lamb or mushroom-heavy pasta all suit. Cellaring for the next ten to fifteen years is well within its range.
