Description
Pierre de Segonzac Cognac Rare is a mellow, long-aged Grande Champagne cognac from a grower-distiller at Segonzac in western France.
Ugni Blanc is picked at high acidity and low alcohol, fermented without sulphur, then run twice through a copper alambic charentais. The heart of the spirit is cut on the second pass, the bonne chauffe. The family work from their own vineyards on the soft chalk of the first and finest of the six crus, and age the spirit in French oak in their cellars, drawing on reserves well beyond the legal minimum. It's bottled at 40 per cent.
Dried fruit, candied orange and the rancio that only long cask time brings. Pour it neat at 18–20°C in a tulip glass after dinner, with coffee, dark chocolate or a mature hard cheese.
