Pierre Gimonnet & Fils Millésime de Collection 1.5L MAGNUM 2015

Pierre Gimonnet & Fils Millésime de Collection is a vintage blanc de blancs held back in the family's cellars and released only once it has real age behind it.

Pierre Gimonnet & Fils is based at Cuis in the Cote des Blancs, the strip of chalk south of Epernay that is Champagne's heartland for Chardonnay, and the family has grown vines there for generations. Its holdings run across Cuis, whose north facing slopes hold acidity, and the grand cru villages of Cramant, Chouilly and Oger, with a high proportion of old vines. The house style is deliberate: whole bunch pressing, fermentation in stainless steel with no oak, malolactic completed and modest dosage, so that the chalk rather than the cellar does the talking. The Collection bottlings are made as the rest of the range, then left on lees far longer than usual, which is why they reach the market years after their peers.

Serve at about 10 to 12 degrees, a little warmer than a young Champagne, with roast chicken, veal or a mature hard cheese.
