Description
Pierrick Laroche Chablis Butteaux is a left bank premier cru from one of the stoniest sites in the appellation, bottled in magnum.
Butteaux sits on the left bank of the Serein at the top of the Montmains group of premier crus, where the Kimmeridgian limestone is harder and stonier than on the valley floor and the soil cover is thinner. The site faces broadly south east, ripens later than the right bank crus and is known for tight, austere Chablis that needs time; old vines here are particularly prized. Wines from Butteaux are typically fermented cool and raised on fine lees in stainless steel or seasoned barrel, with malolactic fermentation allowed to round the acidity, then held back before release.
Firm and mineral with more grip than village Chablis, it suits scallops, turbot, roast chicken and hard cheese; serve at 11 to 12 degrees.
