Description
Pierrick Laroche Chablis Châtillon is a single site village Chablis from the Kimmeridgian marl of northern Burgundy, in magnum.
Chatillon is a named plot within the Chablis appellation rather than a classified premier cru, so the wine carries village status while coming from one defined piece of ground. Chablis sits at the northern limit of Burgundy, where Chardonnay ripens slowly and holds high natural acidity, and the grey Kimmeridgian clay and limestone, thick with fossil oyster shell, is what gives the wine its chalky, saline finish. A single vineyard bottling at this level is normally vinified exactly as the estate's straight Chablis, in neutral vessels with no new oak, so that the difference between the two comes from the plot rather than the cellar.
Dry, taut and stony, it suits oysters, poached white fish and goat cheese; serve at 10 to 12 degrees.
