Pierrick Laroche Domaine des Hâtes Chablis Butteaux is a premier cru climat of Montmains, one of the firmest and slowest-developing sites on the left bank of the valley.

Butteaux is the southern climat of the Montmains premier cru group, on the left bank of the Serein above Chablis town, and it is prized for a band of harder, flinty Kimmeridgian rock with a heavier clay content than its neighbours Montmains and Forêts. Vines here root deeply and the wines are consistently the most austere and slowest to open of the Montmains trio, often needing several years before they show their full breadth. Growers routinely give the fruit longer on lees and sometimes a portion of older oak to soften that structure. Old vines are common on the climat, which adds concentration. The wine is sealed with a Diam closure.

Austere and structured young, this is a Chablis to cellar; serve at 11 to 12 degrees with lobster, scallops, roast chicken or aged Comté.
