Pierrick Laroche Domaine des Hâtes Chablis Fourchaume l'Homme Mort is a premier cru from the northernmost climat of Fourchaume, at Maligny where the estate is based.

Fourchaume is the best known of the right-bank premier crus, a long ribbon of vineyard running north from the grand cru hill on the same Kimmeridgian marl and sharing much of its south west exposure. L'Homme Mort is its far northern climat, at Maligny, cooler and later than the heart of Fourchaume and often bottled under its own name because the wines are noticeably tauter and more mineral than the plumper southern sections. The estate's home village gives it direct access to this ground. Premier cru fruit is vinified separately, fermented cool and given extended ageing on fine lees for texture, then sealed with a Diam closure.

Mineral and tightly wound with the breadth of a good premier cru; serve at 11 to 12 degrees with oysters, lobster, scallops or roast poultry.
