Pierrick Laroche Domaine des Hâtes Chablis Vau de Vey 2022

Pierrick Laroche Domaine des Hâtes Chablis Vau de Vey is a premier cru from a steep, narrow left-bank valley west of the town.

Vau de Vey is one of the more recently developed premier crus of Chablis, planted in earnest only from the 1970s, and it occupies a tight dry valley on the left bank running roughly north east to south west. Its slopes are steep and its soils thin Kimmeridgian marl over limestone, and the exposure is cooler than the grand cru hillside opposite, which tends to give wines of marked tension and a stony, taut profile rather than early richness. Premier cru fruit is picked and kept separate, fermented at cool temperature and given a longer élevage on fine lees than village wine, sometimes with a portion in older barrel. The wine is sealed with a Diam closure.

Tight and mineral in youth and rewarding three to five years in bottle; serve at 11 to 12 degrees with scallops, crab, roast chicken or richer fish.
