Description
Pierrick Laroche Domaine des Hâtes Petit Chablis is unoaked Chardonnay from the Portlandian limestone plateau above the Chablis valley, in the northern commune of Maligny.
Petit Chablis covers the higher, flatter ground around the appellation, where the soil is Portlandian limestone rather than the fossil-rich Kimmeridgian marl of the slopes below. That harder, shallower rock gives a leaner and more sharply citrus expression of Chardonnay, built on acidity rather than texture, and it is a wine made to be drunk in its first few years. The north of the district around Maligny is the coolest and most frost-prone part of Chablis, so yields can swing hard from one harvest to the next. Vinification is in stainless steel with no oak and a short period on fine lees, and the wine is sealed under screwcap, which preserves its tension and freshness.
A brisk, saline aperitif white for oysters, shellfish, sushi and goat cheese; serve well chilled at 9 to 10 degrees.
