Pinard Brothers Sancerre Echoes is a white Sancerre raised entirely in large oak.
Sancerre runs across steep hills on the left bank of the upper Loire, where Sauvignon Blanc is planted on three soil types: the chalky Kimmeridgian marl called terres blanches, the shallow limestone gravel of the caillottes, and flinty silex nearest the river. The Pinard name belongs to Bué, one of the appellation's most highly regarded villages, whose caillottes limestone gives Sauvignon Blanc a firm, chalky frame. This bottling is raised one hundred per cent in large-format oak rather than stainless steel. Large casks expose the wine to far less wood per litre than a barrique, so their contribution is textural rather than flavouring: a slow exchange of oxygen that builds mid-palate weight and settles the aromatics while leaving the mineral line of the site intact.
Fuller and more savoury than a tank-raised Sancerre, it suits roast chicken, richer fish and aged goat cheese; serve at around 11 degrees.
