Description
Pio Cesare Barbaresco is the house's classic blend, drawn from its vineyards across the appellation.
Barbaresco lies east of Alba, closer to the Tanaro than Barolo, which moderates the climate and brings the harvest forward, giving Nebbiolo a little less tannin and a shorter wait before drinking. Blending across communes is the older tradition here, and Pio Cesare, founded in 1881, has always worked that way alongside its single-vineyard wines. Ageing is in French oak and large Slavonian casks.
Decant and serve at 17 degrees with risotto, veal or truffle dishes. It develops over fifteen years.
