Place of Changing Winds Bullengarook Chardonnay 2019

Place of Changing Winds Bullengarook Chardonnay is a Macedon Ranges Chardonnay from close-planted estate vines.

The first Chardonnay from this vineyard, and a tiny one: 4,400 vines at 12,000 per hectare yielded just 900 kilograms. Bunches were pressed whole, hard and fast, and sent to barrel with every scrap of solids. Fermentation happened in new wood, one 300-litre Stockinger and one 228-litre Dominique Laurent, before the wine moved to an older neutral 500-litre cask with all its lees to age, then to tank for some months. Picking pH was 3.2, finishing at 3.35, so acidity was never in doubt even at those yields, and a full malolactic conversion did nothing to blunt it. No fining, no filtration, minimal sulphur, bottled by hand and gravity in June 2020; 887 bottles.

Intense and tonic, with lemon, white flowers and a saline, chalky finish. Tension throughout, despite the wood and the malolactic. Serve at 12 degrees. Match it with scallops, roast chicken or a gratin of fennel and cream.
