Pol Roger Vintage is a Champagne made only in the years the house judges worthy of declaring, drawn from grand and premier cru fruit around Epernay.
Pol Roger was founded in Epernay in 1849 and is among the small handful of significant Champagne houses still owned and run by the founding family. Beneath the Avenue de Champagne the house keeps several kilometres of galleries cut into the chalk, unusually deep and cold even by local standards, so the wines mature slowly and steadily. The vintage cuvee is built on close to equal parts Pinot Noir from the Montagne de Reims and Chardonnay from the Cote des Blancs, fermented in stainless steel, then given far longer on lees than the appellation requires before disgorgement. Riddling is still carried out by hand. The house was Winston Churchill's, and the connection remains part of its identity.
Serve at around 10 degrees in a white wine glass rather than a flute, with roast chicken, scallops or a mature hard cheese, and note that well cellared bottles continue to develop for a decade or more.
