Poli Distillerie Jacopo Poli Amorosa di Dicembre 'Torcolato' Grappa is distilled from the pomace of Torcolato, the sweet dried grape wine of Breganze.
The Poli family have been distilling at Schiavon, below Bassano del Grappa in the Veneto, since 1898, and are now in their fourth generation. Torcolato is made at Breganze, a short distance from the distillery, from Vespaiola grapes that are picked and then hung to dry until December, which is where this grappa takes its name. The bunches were traditionally twisted onto cords, and the word torcolato comes from that twisting. Because the grapes lose so much water before pressing, the pomace left behind is unusually concentrated, and very little of it exists in any year. Poli distil it in small copper stills heated by steam, working in batches so that the character of the raw material carries through.
Serve at about 16 to 18 degrees in a small tulip glass after dinner, with dessert or on its own.
