Poli Distillerie Sarpa Riserva Oro Di Poli Grappa Aged 4 Years is a wood aged grappa from a family distillery in the Veneto, and the senior member of the house's best known range.

The Poli family have been distilling at Schiavon, below Bassano del Grappa in the Veneto, since 1898, and are now in their fourth generation. Sarpa takes its name from the Venetian dialect word for vinaccia, the skins and pips left after pressing, and it is the distillery's signature grappa, drawn from the pomace of Merlot and Cabernet Sauvignon. This Riserva version spends four years in wood, which is where the oro, or gold, of the name comes from. The spirit is distilled in small copper stills heated by steam, in batches rather than continuously, a slower method that the family have stayed with since the nineteenth century.

Serve at about 16 to 18 degrees in a small tulip glass after dinner, with coffee or dark chocolate.
