Primo Estate Joseph Moda Cabernet Merlot 2023

Primo Estate Joseph Moda Cabernet Merlot is a rich, Amarone-inspired red made partly from dried grapes.

Borrowing from the Italian appassimento tradition, Joe Grilli dries a portion of the grapes after picking to concentrate their sugar, flavour and colour before fermentation. Primo Estate has made wine this way for many years, and it has become one of the family's signature techniques. Cabernet Sauvignon and Merlot are the grapes here, and the result is a concentrated, mouth-filling red with blackcurrant, raisin and cigar box notes. The palate is silky and poised, finishing with lingering cedar from its time in oak. It sits at the top of the range as one of the estate's best-known wines.

Open it an hour ahead or decant, and serve at 17 to 18 degrees. Braised beef cheeks, osso buco or a mature parmesan are ideal partners. It will cellar comfortably for ten years or more.
