Primo Estate Zamberlan 2023

Primo Estate Zamberlan is a rich Cabernet Sauvignon Sangiovese made using the Italian ripasso technique.

Ripasso is a Veneto tradition in which a finished wine is refermented on the skins left over from making dried-grape wines, picking up extra depth, texture and warmth. Primo Estate applies the idea in McLaren Vale, passing this blend over skins from its dried-grape Moda. Cabernet Sauvignon gives rich, ripe dark berry fruit and structure, and Sangiovese adds a lift of maraschino cherry and savoury acidity. The ripasso process contributes dark chocolate and nutmeg spice, making for an intense, complex wine at a moderate 13.5% alcohol.

Serve at 16 to 18 degrees, with a little time in a decanter if you can. Try it with slow-cooked beef ragù, venison or duck. It will drink well now and over the next several years.
