Pyramid Valley Lions Tooth Chardonnay is a single-block biodynamic Chardonnay from the Waikari estate.
Higher clay content in this 0.4-hectare parcel is why the dandelions took over, dent-de-lion in French, and why it is the more vigorous of the estate's two Chardonnay sites. Mike Weersing credited these soils with a nut and crumb structure and rare mineral fertility; they sit on the limestone that runs under the whole property, on a steep east-facing pitch. Cellar treatment matches the other Chardonnay block exactly, which makes the difference between the two a question of aspect and soil alone. The 2020 carries the racy acidity of the vintage, softened a touch because malolactic fermentation ran to completion here.
Lemon oil, white peach and roasted nut with a saline, chalky close and acidity that is bright without being severe. Twelve degrees. Pair it with grilled snapper, chicken poached with tarragon, or a wedge of hard sheep's cheese.
