Pyramid Valley Marlborough Sauvignon + 2022

Pyramid Valley Marlborough Sauvignon + is a Sauvignon Blanc-led white with a touch of Pinot Gris, made from certified organic fruit.

Ninety-eight per cent Sauvignon Blanc and two per cent Pinot Gris, drawn from three certified organic vineyards: principally Sam and Mandy Weaver's Churton in Marlborough, with support from the Porters' Bellbird site and the Good Family vineyard in North Canterbury. Tank held two-thirds of the ferment, concrete tulips 15 per cent and old barrels 17 per cent, with a small fraction going on skins. That skin portion, along with partial malolactic conversion, is the tool used to round out the acidity without stripping the freshness that makes the variety worth drinking. It sits a long way from commercial Marlborough.

Textural and racy, with meadow herbs, white nectarine and citrus, closing dry and faintly saline. Serve at 10 to 11 degrees. Goat's cheese, grilled asparagùs, whitebait fritters or a plate of prawns with lemon all make sense.
