Pyramid Valley North Canterbury Chardonnay 2023

Pyramid Valley North Canterbury Chardonnay is an unfined, unfiltered Chardonnay from old Waipara vines.

Omihi clay at Waipara Springs, and the old Mendoza vines rooted in it, form the backbone here as they do every year. The 2023 was whole-bunch pressed and the juice run straight to barrel without settling, then left to ferment wild in French oak with 28 per cent new. It stayed twelve months on lees without any sulphur addition, was racked to tank in April 2024 and spent a second winter on light lees before bottling unfined and unfiltered. That is a good deal of patience for a regional blend, and it shows in the density: old vines with the acidity to carry them.

Saline and rich at once, with lemon, white peach, toasted nut and a long, tightening finish. Serve it at 12 degrees and give it fifteen minutes. Roast chicken, grilled scallops, or a leek and parmesan tart.
