Pyramid Valley North Canterbury Rosé 2022

Pyramid Valley North Canterbury Rosé is a dry, structured rosé made entirely from old-vine Pinot Noir.

Straight Pinot Noir this year, all of it from old 10/5 clone vines planted in the early 1990s at the Waipara Springs vineyard, a site Pyramid Valley manages without artificial chemicals or fertilisers. Picking fell on 11 April, which is late, and that is how the colour stays pale and the acidity stays high. Whole bunches went to the press, and the juice fermented on indigenous yeasts split between concrete tulips and old puncheons. It then rested six months on its ferment lees without sulphur before blending in November. Structured and vinous is the right description: this is closer to a light red than to most pink wine.

Wild strawberry, blood orange and a savoury mineral undertow, with genuine texture and a long dry finish. Ten to eleven degrees. There is substance here for roast chicken, pork rillettes or grilled fish, and enough grip for a plate of olives and jamón.
