Pyramid Valley North Canterbury Sauvignon + 2021

Pyramid Valley North Canterbury Sauvignon + is a dry white, almost entirely Sauvignon Blanc, from two Waipara vineyards.

The plus in the name is three per cent Pinot Gris. Sauvignon Blanc comes from the Fraher vineyard, planted in 2002 on Omihi clay, and from Porters, planted in 2004 on Domett clay, both farmed sustainably. Fermentation was natural and split across tank, neutral barrels and clay amphorae, with five per cent of the fruit left on skins for two to three weeks, then three months on lees and bottling without fining. Sauvignon Blanc gets short shrift from serious drinkers in this country, largely because of what Marlborough sells by the tanker; clay soils and this sort of handling give a very different wine.

Herbal and citrus-driven, with white nectarine, a chalky grip from the skin-fermented portion, and a dry finish. Serve at 10 to 11 degrees. Goat's cheese, oysters, grilled zucchini with lemon, or a bowl of pipis with white wine and garlic.
