Quealy Splendido 2021

Quealy Splendido is a zero-dosage traditional-method sparkling wine made entirely from Moscato Bianco.

Earlier releases were pet-nats, but from 2021 the method changed, the team judging that a traditional-method wine would give them the clarity they were after. Fruit came from the 100 Hunts Vineyard at Merricks North, owned and farmed by Joe Vaughan, who took the inaugural Mornington Peninsula Vineyard of the Year award in 2021, and grown there specifically for this wine. Picking happened before dawn so the grapes arrived cool at the winery minutes down the road. Picked at 10.5 Baume to hold perfume and acid, gently pressed to a low yield, settled, racked, fermented, then tiraged and bottled straight away for its second ferment. Disgorged by hand, no sulphur, no dosage.

White florals, chamomile and teacake spice, with a skinsy textural edge under a clean, fresh and surprisingly sturdy palate. Serve at 8 degrees. It is a good aperitif, and holds up to fried school prawns, salt-and-pepper squid, or a bowl of olives and almonds.
