Description
Quebrada Del Chucao Cider is a bottle-conditioned dry cider from Loncoche in southern Chile.
Pronounced kay-brada del choo-cow, the name means creek of the chucao, after the chucao tapaculo, a shy ground-dwelling bird of southern Chile's temperate forests that also appears on the label. Diego Rivera makes this in the traditional method, taking the cider through a second fermentation in bottle and turning and disgorging every one by hand, a laborious route he prefers for the depth and the soft, fine carbonation it delivers. He describes the house style as sitting between Asturias and England, firmly on the dry side, with the aromatics worked harder than a typical Spanish sidra and oxidation kept in check while the wilder, more complex notes are allowed through.
Dry, taut and faintly funky, with baked apple skin, lemon and a savoury, cidery bite under fine bubbles. Serve cold, around 7 degrees, in a wine glass. It belongs with roast pork, mussels, a sharp cheddar, or fish and chips on the beach.
