Ragnaud Sabourin Florilège is a Cognac from Grande Champagne, the innermost and most prized of the region's six crus.
The Ragnaud-Sabourin estate sits at Ambleville, in the chalk country south of the town of Cognac, where Grande Champagne's soft, water retentive soils are held to give eaux-de-vie the greatest capacity to age. It is one of a small number of Grande Champagne growers who farm, distil, age and bottle everything themselves rather than selling spirit on to the big houses, and it has a long standing reputation for bottling without the caramel, sugar or oak infusions the appellation permits. Florilège is the oldest expression in the range, drawn from very old reserves held in the family cellars and matured for decades in Limousin oak. Spirit of this age is brought down to bottling strength gradually, over years rather than at the last moment.
Serve neat at room temperature in a tulip glass rather than a balloon, without ice, and give it a few minutes in the glass after pouring.
