Description
Ravensworth Estate Sangiovese is a medium-bodied Sangiovese from three clones grown at Murrumbateman.
Sangiovese is where all this started, and it remains the variety Bryan Martin is best known for. Three clones go into it, MAT6, MAT7 and VCR23, hand-harvested and tipped into ten-hectolitre wooden cuves and twelve-hectolitre concrete pyramids. The berries were kept whole and plunged daily across a maceration that ran anywhere from three to twelve weeks; Martin argues the extended time draws tannin from seed as well as skin, which gives the wine its layered grip. It stayed in concrete until autumn, then moved to a thirty-hectolitre Stockinger foudre to finish its maturation, where large-format wood softens without leaving any oak flavour behind.
Sour cherry, dried orange peel and tomato leaf, with tannin that is dusty and drying in the best Tuscan sense. Serve at 16 degrees. Pasta with a slow ragu, roast lamb, or a plate of pecorino and olives would all be a fine match.
