Ravensworth Hilltops Nebbiolo 2022

Ravensworth Hilltops Nebbiolo is a full-bodied Nebbiolo from two vineyards in the Hilltops region.

Piemontese varieties have become as much a part of this cellar's identity as Sangiovese, Riesling and Shiraz Viognier. The fruit comes from Bit of Heaven and Grove, two Hilltops sites whose soils differ in detail but share a granite base threaded with windblown clay sediments, and which sit at a similar 500 to 600 metres. The 2022 fermented on skins in ten-hectolitre oak cuves for four months, an extraordinarily long maceration by Australian standards and the sort of treatment Nebbiolo's tannin demands. Pressing back to cask followed, then a move into foudre for another eighteen months before bottling in November 2024.

Rose petal, tar, sour cherry and dried orange over tannin that is firm, fine and long. Serve at 17 degrees and give it an hour in a decanter. Braised beef, mushroom risotto, or a slow-cooked osso buco will meet it head on.
