Ravensworth Regional Fiano 2024

Ravensworth Regional Fiano is a dry, barrel-fermented Fiano from shale-rich vineyards in Hilltops.

Grove and Bit of Heaven, both on shale-rich ground in Hilltops, supplied all the fruit for the 2024. Earlier releases under this label carried some Vermentino and Grechetto, but this one is pure Fiano. The grapes were destemmed and given a short spell on skins before pressing to 500-litre puncheons, where they fermented and then stayed for eleven months. Fiano has proved itself in warmer inland Australian sites for its ability to hold acid and build texture without losing shape, and the short maceration plus puncheon raising here pushes it towards the savoury, textural end of the variety.

Nashi pear, lemon oil, hazelnut and a faint herbal bitterness, with weight through the middle and a dry finish. Serve at 11 degrees. Pair it with roast chicken, a seafood risotto, or fried zucchini flowers with ricotta.
