Recaredo Corpinnat Intens Rosat Brut Nature is a deeply coloured biodynamic sparkling rosé made entirely from Mourvèdre, known locally as Monastrell.

Corpinnat is the collective mark of a small group of Alt Penedès producers who left Cava in order to guarantee estate-grown, organically farmed fruit and extended lees ageing. Recaredo, of Sant Sadurní d'Anoia, farms biodynamically. The fruit for Intens comes from the Serral del Vell vineyard at 250 metres and Marçaneta at 200 metres. Ton Mata has deliberately avoided the pale style now in fashion, arguing that it does not suit the character of the Alt Penedès, so the wine is given six hours of skin contact and takes on an intense ruby colour. It is made by the traditional method and aged 32 months in bottle before hand disgorgement, with no dosage. Despite the colour it keeps the frame of a fine blanc de blancs, with vinous texture and the savoury twist that Mourvèdre brings.

Ready now, and best treated as a wine for the table rather than an aperitif: charcuterie, duck or a tomato-heavy paella. Serve at about 8°C.
