Recaredo Corpinnat Subtil Brut Nature is a biodynamic single-vineyard sparkling wine made entirely from Xarel·lo grown at Serral del Roure.

Corpinnat is the grower designation in the Alt Penedes for estate-grown, organically farmed sparkling wine given long ageing on lees. Recaredo farms biodynamically and disgorges by hand, releasing everything brut nature with no dosage. Subtil comes from the Serral del Roure estate, which ranges from 210 to 285 metres in altitude. Its soils are loamy, with a fairly even balance of sand, silt and clay, and slightly more clay than at Serral del Vell, which tends to give a rounder and more mouthfilling wine. A portion of the base wine is fermented in Stockinger barrel, adding savoury complexity, and the wine spent 36 months in bottle before hand disgorgement. It is a suave expression of Catalonia's signature white variety, with a core of stone fruit and a long, chalky, bone-dry finish.

Drinking well now and good for five years or so; serve at 8C with grilled calamari, salt cod fritters or roast chicken.
