Redbank Bella Vista Road Methode Traditionelle is a dry, bottle-fermented sparkling wine from the King Valley.

Made in the traditional method, with the second fermentation taking place in bottle, this sparkling combines Chardonnay and Pinot Noir from the King Valley's cool, high-altitude sites. That fruit provides the fresh natural acidity that runs through the Redbank house style. The wine is fruit forward, dry and crisp, with orange blossom, sherbet, citrus and a hint of strawberry on the nose, and white stone fruit and lemon zest on the palate. As it ages it builds nougat and brioche complexity while keeping that firm backbone of acidity.

Pour it well chilled with oysters, smoked trout, tempura prawns or a soft washed-rind cheese.
