Redbank Elevage Blanc de Blanc 2023

Redbank Elevage Blanc de Blanc is a single-vineyard sparkling Chardonnay from high in the King Valley.

Élevage is the French term for raising a wine from fermentation through to bottling, and for this King Valley producer it also nods to the elevation of its vineyards. The fruit comes from one high-altitude site, where cool conditions preserve bright natural acidity. It is made using the Charmat method, with the second fermentation in tank, which keeps the focus on fresh fruit. Lychee and lime lead, followed by golden kiwi and pear, with a citrus line through the mid palate and a subtle creaminess on the finish.

Chill well and serve with sashimi, crab cakes or chicken liver pâté, or as a celebratory aperitif.
