Description

Redbank The Eyrie Pinot Noir is a structured, savoury Pinot Noir made with stalk fermentation and barrel ageing.

An eyrie is an eagle's nest on high ground, a name that suits the high country of the King Valley. This is a more serious Pinot in the Redbank range. Fermenting with stalks adds spicy tannin and structure, and the wine is then aged in barrel. Cedar, spice and strawberry lead the aromas, while the long palate combines strawberry fruit with firm, spicy tannins. The acidity is entirely natural, giving a crisp, well-structured finish that should carry the wine well in the cellar.

Serve at around 15 to 16 degrees. Roast duck, lamb rack, beef bourguignon or a mushroom tart will suit its structure. It can be cellared for a few years.
