Rieslingfreak No.12 comes from the Flaxman Valley, a high pocket within the Eden Valley.

Flaxman sits among the highest and coolest ground in the Eden Valley, where ripening runs late and acidity stays sharp. Bottling it separately from the broader Eden Valley wine is exactly the kind of distinction a single-variety producer exists to draw. The wine is fermented cool in stainless steel and bottled dry.

Serve at 8 degrees with oysters, salads or a goat's cheese. It will age for a decade.
