Description
Ringbolt Cabernet Sauvignon is a classic Margaret River Cabernet with the structure and freshness the region is known for.
The label takes its name from Ringbolt Bay near Cape Leeuwin, at the southern tip of the Margaret River region, where the Indian and Southern Oceans meet and a ship was wrecked in the late 1800s. Established in 2001 and linked from the start to the Yalumba cellars in the Barossa, Ringbolt concentrates on Cabernet Sauvignon. The fruit is drawn from several small vineyard sites, with Wilyabrup a key source, on gravelly and sandy soils that naturally keep yields low. Blending parcels from different aspects and soils builds complexity, and the wine is matured in seasoned barriques so the oak supports the fruit without taking over.
Decant for half an hour and serve at 16 to 18 degrees with a scotch fillet, lamb shanks or a mushroom risotto. It drinks well young and will hold for several years in a good cellar.
