Riva dei Frati Prosecco DOC Rosé Extra Dry Millesimato NV is a sparkling rosé from the Veneto, made in a category that only came into existence in 2020.

Prosecco Rosé was approved for the 2020 harvest after years of argument within the consorzio, and its rules are strict: Glera with between ten and fifteen per cent Pinot Nero vinified as a red wine, a minimum of sixty days on the lees in tank, and a compulsory vintage on the label, which is why every example is a millesimato. The bubbles come from the Charmat or Martinotti tank method rather than a second fermentation in bottle. Extra Dry, confusingly, is a touch sweeter than Brut, carrying between twelve and seventeen grams of residual sugar per litre; it is the older and more traditional Prosecco dosage.

Serve very cold, at around 6 to 8 degrees, as an aperitif or alongside prosciutto, salumi and light antipasti.
