Robert & Bernard Plageoles Mauzac Nature is a Gaillac méthode ancestrale sparkling wine made from the rare pink-skinned Mauzac Rose.
Gaillac has produced méthode ancestrale sparkling wine since the 1500s, long before Champagne turned to bubbles, and for many years méthode gaillacoise was a widely used synonym for the technique; these are, in effect, the ancestors of today's pét-nats. The Plageoles version comes from a forty-year-old parcel of Mauzac Rose, an exceptionally rare variant of the Gaillac grape that the family has done most to preserve. The naturally fermented base wine is chilled to arrest fermentation while 25 to 30 grams per litre of sugar remain. The following spring it is put into bottle, where fermentation resumes under cork and creates the bubbles. Nothing else is added and no dosage is needed, since the second fermentation stops of its own accord with a little sugar still in the wine. Because the bottles are not disgorged, expect a slight cloudiness.
Drink it young and well chilled at around 8°C, as an aperitif or with oysters, fried chicken or an apple tart.
