Robert Weil Rheingau Riesling Kabinett Trocken 2021

Robert Weil Rheingau Riesling Kabinett Trocken is a dry Kabinett drawn from the coolest and highest slopes at Kiedrich.

Kabinett is the lightest rung of the German Prädikat scale, and in its dry form it makes a wine of low alcohol and considerable delicacy. Where the estate's Rheingau Trocken draws on a broad selection, this bottling comes exclusively from the coolest, highest parcels around Kiedrich, principally the steep, southwest-facing Wasseros vineyard that abuts the Gräfenberg vines. The other difference is timing: the fruit is picked a little earlier, which gives a wine at least a degree lower in alcohol without leaving it any sweeter. It was raised exclusively in stainless steel, with no cask influence at all, so the style is lighter and more filigreed than the hillside wines, with a caressing lightness of touch across the palate.

Drink it young and fresh, over the next five years, as an aperitif or with oysters, sushi or a green salad. Serve at 10–12°C.
