Description
Weil's Kabinett Trocken is a dry Riesling picked early from the coolest and highest slopes at Kiedrich, and made at a lower alcohol than the estate wine.
Kiedrich sits in the eastern Rheingau below a run of steep phyllite slopes that Weingut Robert Weil has farmed since the 1860s. Where the estate Trocken draws on several sites around the village, this bottling comes only from a selection of the coolest and highest of them, principally Wasseros, a steep south-west facing vineyard that adjoins the Gräfenberg vines. The fruit is picked a little earlier, which yields a wine at least a degree lower in alcohol without leaving it any sweeter; Kabinett here denotes ripeness at harvest, not sugar in the glass. It is raised entirely in stainless steel, with no oak at any stage, so the result is the most filigreed of the estate's dry Rieslings, light in touch and driven by acidity rather than weight.
At its best in the first three to five years. Serve at 10-12°C with oysters, steamed white fish or a green salad with goat's cheese.
