Roches Neuves Bulles de Roche is a zero-dosage traditional-method sparkling from biodynamic parcels in Saumur.
Domaine des Roches Neuves, at Varrains, is one of Saumur's leading biodynamic estates, and Thierry Germain made his name there with Cabernet Franc and Chenin Blanc before turning that approach to sparkling wine. Fruit for this cuvée comes from a range of biodynamic parcels in Saumur, together with a vineyard at Le Puy-Notre-Dame, an appellation permitted only for red wine. The blend is ninety per cent Chenin Blanc, with the remainder split between Cabernet Franc and Chardonnay. Germain picks late by the standards of sparkling base wine, waiting for ripeness and character rather than acidity alone, then presses whole bunches and ferments naturally in a mixture of stainless steel and barrels previously used for the Insolite cuvée. The wine spends around eighteen months on lees in bottle before being disgorged with no additions at all.
Drinking well now and good for several years. Serve at around 8°C with oysters, fried chicken or a plate of hard cheese.
