Description
Roches Neuves Bulles de Roche is a méthode traditionnelle sparkling wine made mostly from biodynamically farmed Chenin Blanc in Saumur.
Sparkling Saumur is the original sparkling wine of the Loire, made since the 1830s, and it remains a serious style in the right hands. Thierry Germain draws the fruit from a range of biodynamic parcels in Saumur along with a vineyard at Le Puy-Notre-Dame, an appellation given over to red wine. The blend is 90 per cent Chenin Blanc, with the remainder split between Cabernet Franc and Chardonnay. Germain picks later than is usual for base wine, waiting for ripeness and character rather than acidity alone, then presses whole bunches and ferments in a mixture of stainless steel and barrels previously used for the Insolite cuvée. The wine ages on lees in bottle for around eighteen months and is disgorged with nothing added.
Bone dry and chalky, it drinks now and over the next three or four years; serve with oysters, fried fish or goat's cheese at about 8°C.
