Roches Neuves Saumur Champigny Outre Terre is a biodynamic Cabernet Franc fermented and macerated in a single Georgian amphora, with no sulphur added at any point.
Saumur-Champigny lies on the left bank of the Loire east of Saumur on tuffeau limestone, and it is the appellation that built Cabernet Franc's reputation for perfumed, finely structured reds. Thierry Germain came from Bordeaux to Varrains in 1991 and farms Roches Neuves biodynamically; his amphora cuvées first appeared in 2013. Outre Terre, meaning out of the earth, comes from 0.6 hectares of twenty-year-old vines at Jeune de Carrefour, rooted in sand over limestone within walking distance of the edge of Saumur. Germain de-stems the fruit and loads it into one 800-litre Georgian amphora for fermentation and maceration. After eight months the wine is pressed into seasoned oak barrels for a further twelve months and then bottled directly from barrel.
Drink it over the next few years and give it a short decant. Serve lightly cool at 15-16°C with roast pork, goat's cheese or grilled vegetables.
