Roches Neuves Saumur-Champigny Terres Chaudes now comes entirely from the Poyeux terroir at Chaintres, in the heart of the appellation.
Saumur-Champigny is Cabernet Franc country on the left bank of the Loire, where shallow topsoil sits over tuffeau limestone. Poyeux is one of its best-known sites, made famous by Clos Rougeard, and Terres Chaudes was previously a blend of two terroirs before being narrowed to this one. Thierry Germain farms biodynamically, and the vines for this cuvée average around 50 years, planted on the slope where the roots reach limestone almost immediately. All the fruit is destemmed and ferments in cement with some foot treading, after which the wine matures in 60-hectolitre neutral wooden vats. The style is refined and silky, but the imprint of the site comes through in the wine's ripe, spiced fruit and its firm, powdery limestone finish.
Drinkable now and expected to open out over three or four years. Serve at 16°C with roast lamb, grilled quail or a beetroot and goat's cheese salad.
