Royal Tokaji Essencia 375mL 2009

Royal Tokaji Essencia is the rarest thing Tokaj produces, the free run juice of botrytised berries and one of the most concentrated wines in the world.

Essencia is not made in the ordinary sense. Aszú berries, shrivelled by noble rot, are gathered into tubs and the weight of the fruit alone presses out a syrup so rich in sugar that fermentation barely proceeds; the finished wine typically carries several hundred grams of residual sugar per litre and only two or three degrees of alcohol. It ferments for years rather than months, and is produced only in seasons where botrytis arrives in sufficient quantity. The Royal Tokaji Wine Company, founded in 1990 by a group including the writer Hugh Johnson, revived the practice alongside the region's classified first growth vineyards.

Traditionally taken by the spoonful rather than the glass, lightly chilled.
