Sadie Family Swartland Palladius 1.5L MAGNUM 2021

Sadie Family Swartland Palladius in 1.5-litre magnum is a white blend of all eleven varieties permitted in the Swartland, led by old bush-vine Chenin Blanc.

Seventeen sites feed it, taking in Clairette Blanche, Grenache Blanc, Marsanne, Roussanne, Verdelho, Viognier, Colombard, Palomino, Semillon Blanc and the very scarce Semillon Gris. Most are planted on decomposed Paardeberg granite, four on sandstone, and most pass the thirty-five-year mark, the oldest dating to 1935. Even Eben Sadie's own younger plantings are held to 30 hectolitres per hectare. Whole bunches go through a vertical press straight into clay amphorae and 725-litre concrete eggs, then into large foudres, with the full cycle running two years before an unfined, unfiltered bottling. The magnum only extends the runway.

Broad and textural more than racy, with dried apricot, fennel seed, honey and a phenolic grip that carries the finish. Serve at 12 to 13 degrees in a big glass. Roast pork, a creamy fish pie or a well-aged cheddar suit it.
